Avocado and Hemp Mediterranean Inspired Salad

One of my all time favorite lunches! This nourishing low-carb, high fat salad is not only easy to make, but super satisfying!

Serves: 1
Ingredients
Salad
1-2 Handfuls Baby Spinach
4 Tablespoons Hemp Hearts
1 Tablespoon Pumpkin Seeds
4-6 Kalamata Olives
5 Basil Leaves, Chopped
1/2-1 Sliced Avocado
Dressing
1-2 Tablespoons Coconut Oil or Extra Virgin Olive Oil (or both!)
1 Tablespoon Apple Cider Vinegar
Sea Salt, to taste
Stevia, to taste
Sprinkle Dried Oregano (optional)
Instructions
Combine Spinach, Hemp, Pumpkin Seeds, Olives and Basil in a large salad bowl
Add Oil, Apple Cidar Vinegar, Salt, Stevia and Oregano. Mix Well.
Add Avocado on top and enjoy!
