Avocado and Hemp Mediterranean Inspired Salad

One of my all time favorite lunches! This nourishing low-carb, high fat salad is not only easy to make, but super satisfying!

Vegan+Low-Carb+Keto-Friendly+Candida-Friendly+Paleo

Prep time: 10 mins

Serves: 1

Ingredients

Salad

  • 1-2 Handfuls Baby Spinach

  • 4 Tablespoons Hemp Hearts

  • 1 Tablespoon Pumpkin Seeds

  • 4-6 Kalamata Olives

  • 5 Basil Leaves, Chopped

  • 1/2-1 Sliced Avocado

Dressing

  • 1-2 Tablespoons Coconut Oil or Extra Virgin Olive Oil (or both!)

  • 1 Tablespoon Apple Cider Vinegar

  • Sea Salt, to taste

  • Stevia, to taste

  • Sprinkle Dried Oregano (optional)

Instructions

  1. Combine Spinach, Hemp, Pumpkin Seeds, Olives and Basil in a large salad bowl

  2. Add Oil, Apple Cidar Vinegar, Salt, Stevia and Oregano. Mix Well.

  3. Add Avocado on top and enjoy!
