Avocado and Spinach Flat Bread

Ingredients

Flatbread

  • 3 tablespoons hemp hearts

  • 1 tablespoon chia seeds

  • 1 tablespoon coconut flour

  • 15 almonds OR 1 tablespoon unflavored protein powder (I use pumpkin seed protein)

  • 1 teaspoon baking powder

  • pinch of baking soda

  • pinch of sea salt

  • stevia to taste

Toppings

  • 1/4-1/2 cup mashed avocado

  • handful of spinach

  • 1 tablespoon coconut oil

Instructions

  1. Soak your hemp hearts overnight

  2. Add coconut oil, chia seeds and warm water to blender

  3. Blend on high for about 30 seconds

  4. Drain hemp hearts and add to a small sauce pan, add coconut oil and chia seed mixture

  5. Stir over medium heat for 5-10 minutes

  6. Reduce heat to medium-low for another 5-10 minutes

  7. Stir in salt and stevia
