Peanut-Free Thai Peanut Curry

I was craving some Thai Peanut Curry, and this is what I came up with to satisfy the craving!

Vegan+Low-Carb+Keto-Friendly+Candida-Friendly+Paleo

Prep time: 10 minutes

Total time: 30 minutes

Serves: 1

Ingredients

  • 4 cups of your favorite vegetables (I used celery, asparagus, spinach and zucchini)

  • 4 tablespoons hemp hearts

  • 1 tablespoon coconut oil

  • 1-1/2 teaspoons ground turmeric powder

  • 3 teaspoons curry powder

  • ½ teaspoon cumin

  • ¼ teaspoon sea salt

  • Stevia to taste

  • 1/2 tablespoon lime or lemon juice

Instructions

  1. Add vegetables to a large sauce pan with a little bit of water, saute on med until tender.

  2. Meanwhile, add the remainder to the ingredients to your high speed blender or food processor, mix until creamy.

  3. Stir in the sauce with the vegetable mixture

  4. Enjoy!
